Fish Ragù/Sauce

What’s better than fish Friday? Pasta fish Friday! If you are a fish lover (which I am) get ready for a healthy recipe to try with some spaghetti or pappardelle or tagliatelle pasta. You can find already made cut fish mixes, which usually include cod, smoked haddock and salmon.

Ingredients:
For 4 people
Fish mix (cod, smoked haddock and salmon or similar) 300/350g
Pappardelle or similar pasta 350g
Tomato passata or chopped tomato sauce 200g
White wine 100 ml
Double cream 100 ml
Garlic clove 1
Thyme 4 sprigs
Extra virgin olive oil 3 spoons
Salt A sprinkle
Rock salt A handful
Method
1. Chop the fish in smaller pieces and put it in a pan with olive oil, the garlic clove and chopped thyme.
2. Cook the fish for about 5 minutes, then add the white wine. Make sure the wine evaporates.
3. Add the tomato sauce and the double cream and continue to cook for about 10 minutes. Add salt according to your preference.
4. In the meantime, boil a pan of water, add rock salt and cook the pasta as shown on the package.
5. Drain the pasta directly in the pan with the fish sauce, stir and it’s ready to eat!
