Paccheri with Courgettes and Shrimps

Paccheri are a very common pasta for fish dishes in Italy! I have found them in the fresh pasta section in English supermarkets...

Ingredients

For 4 people

Paccheri (or a pasta of your choice) 360g

Courgettes 3

Shrimps 300g

Shallots 1

Extra virgin olive oil 6 spoons

White wine 2 spoons

Whiskey (optional) 2 spoons

Salt A sprinkle

Pepper A sprinkle

Rock salt 20g


Method

1. Chop a shallot in half and place the two halves in two pans with 3 spoons of olive oil each.

2. Slice the courgettes in thin slices and place them in one of the two pans. Stir for a minute and cover. Leave for about 15/20 minutes, occasionally stirring. Add a sprinkle of salt and pepper at the end and remove the shallot.

3. Meanwhile, add the shrimps in the other pan, cover to cook for 10 minutes. Then add white wine, whiskey, salt and pepper. Remove the shallot, stir and let the alcohol evaporate.

4. Boil the water for the pasta and add rock salt. Pour the pasta and cook for as long as the brand indicates.

5. Drain the water and add the courgettes and the shrimps to the pasta.

6. Stir everything together and it’s ready to serve!
