Salmon Pasta

This is an easy healthy recipe that you can try on a Fish Friday :) Did you know that salmon is rich in Omega-3, B-12 protein and potassium?


Ingredients

For 4 people

Penne or Farfalle pasta 360g

Salmon 200g

Double cream 150ml

Tomato sauce 50g

Shallots 1

Extra virgin olive oil 4 spoons

White wine 2 spoons

Parsley A generous sprinkle

Rock salt A handful


Method

1. Chop a shallot in half and place it in a small pan with olive oil.

2. Slice the salmon and add it once the oil is frying slightly.

3. After a couple minutes of stirring, add the white wine and let it evaporate.

4. Meanwhile, boil the water for the pasta and add rock salt. Pour the pasta and cook for as long as the brand indicates.

5. Remove the shallot pieces and add the tomato sauce. When the pasta is almost ready add ¾ of the double cream and parsley.

6. Drain the water and add salmon to the pasta.

7. Stir everything together and put the rest of the double cream on top and serve!
