Courgettes and Scamorza Quiche

What’s Scamorza affumicata? It’s a smoked type of cheese which comes from the south of Italy. It is a great alternative to mozzarella, when you feel like a kick in taste! I have found it in most supermarkets in the UK - look out for the Granarolo brand!

Ingredients
Puff Pastry Roll 1 jus-rol pastry sheet
Courgettes 2 big or 3 small
Scamorza (or similar cheese) 200g
Eggs 2
Grated parmesan cheese 20g
Garlic 1 clove
Oil 3 spoons
Salt A sprinkle
Method
1. Slice the courgettes in thin round slices.
2. Put the olive oil in a pan with the garlic clove and let it cook for about 5 minutes.
3. Add the courgettes slices and stir for a couple minutes.
4. Cover the pan and cook the courgettes for 10/15 minutes, stirring every now and then.
5. In the meantime, break the eggs in a bowl and whisk with a fork, then add the grated parmesan and a sprinkle of salt and whisk again.
6. Turn of the pan and put the courgettes in a big bowl to cool down.
7. Take a baking tray and roll out the puff pastry. Cut the scamorza cheese in cubes and place them at the base of your quiche.
8. Add the eggs mix with the courgettes, stir and pour in the pastry sheet; try to spread it out equally.
9. Place the leftover scamorza on top of your quiche.
10. Cook the quiche in a preheated oven at 200° for about 30, or until the pastry crust becomes golden/brown.
