Lemon Chicken and Courgettes Chips

A tasty and healthy main that you can prepare for either lunch or dinner, with a lemony sauce you won't be able to forget! You can decide to cook them together at the same time, separately, or you can swap the meat/side as you prefer!

Ingredients

For 2 people

Courgettes chips:

Courgettes 2

Flour 100g

Sunflower or vegetable oil 700ml

Salt A sprinkle

Lemon Chichen:

Chicken breast/chunks/fillets 400g

Lemon (juice) 1

Flour 100g

Extra virgin olive oil 3 spoons

Shallot 1

Water 1 glass

Salt A sprinkle

Parsley A sprinkle


Method

Courgettes chips:

1. Slice the courgettes in thin slices and lay them down on a surface with some kitchen roll to absorb excessive water and sprinkle some salt on them. Leave them to dry for a couple hours.

2. Pour the oil in a pan and heat it up, but make sure it doesn’t boil (it would mean it’s too hot to fry).

3. Pour the flower in a bowl and dip about a quarter of the courgettes slices.

4. Mix them with your hands and drop them into the hot oil. Use a scoop with holes if possible.

5. Leave them in the oil until they become slightly brown and crispy.

6. Place them in a bowl with kitchen rolls paper or greaseproof paper to absorb any oil in excess.

7. Repeat the process until you have cooked them all!

Lemon chicken:

1. Chop the chicken in smaller pieces and try to make them roughly the same size.

2. In a pan, add the olive oil and chop the shallot in a couple of pieces.

3. Once it begins frying slightly, dip the chicken in a bowl of flour and add it in the pan. In the meantime, you can squeeze the lemon to get the juice, and keep it on the side.

4. Let the pieces cook for a few minutes, while you keep stirring them to make sure they cook on each side.

5. Now remove the shallot pieces, add the lemon juice, a glass of water and a bit of salt depending on your preference.

6. Cover the chicken pieces and let them cook for about 8 minutes, stirring every now and then.

7. When they are cooked, you can add a sprinkle of parsley for decoration.
